Chipotle seasoned pork loin, barley seasoned with onion soup mix, and stir fry veggies.

That is, if I'm hungry enough to eat after all the junk food I've had today.

Soup. I made a huge batch a while ago and put some in the freezer. I'll re-heat it tonight and make some pop-overs or something.

You know, I eat leftovers and out-of-a-can on weeknights - absolutely no time to spend in the kitchen. I do all my important cooking on the weekends. For instance, I opened a can of ravioli tonight and piled on some Mozzarella. Last weekend, though, I finished off my New Years black eye peas and cooked a batch of onion rings. I use holiday weekends for cooking projects like my International Wok projects. If things go right (my water was off yesterday and has very little power tonight, so, I don't know), I plan to cook a big batch of Angolan chili, fennel salad, and corn and rice bread. If it goes well, I'll let ya'll know. If it doesn't - you'll never hear.....

Thank you, cynthia. Yes, I do the 'doubling' thing too but this time it didn't work. It is hard to find a larger sized roast these days. So the one I had was just over a little over 2 lbs. . . not enough to share. So they got it.

Anyway tonight I am roasting some chicken breasts and will bake some potatoes at the same time. Plan on cooking broccoli and having pineapple and blueberries as well. Nothing fancy but good solid nutrition.

I just bought a 14 lb roast at Costco. However, earlier in my shopping trip I went to Top Foods and could not find a roast even two pounds. It was either famine or feast. I am going to cut the 14 lb roast up and freeze it in chunks.

We had a Costco roast chicken, green salad and bread with garlic chunks in it.

We had Doritos Casserole, burgers and fries with gravy over the fries and last night was a chicken lasagna provided by a wonderful friend because hubby spent most of the day in the ER. Tonight is chili with homemade bread.
